Description
Alfalfa, also known as lucerne, is a perennial plant belonging to the legume family (Fabaceae). Valued for centuries, it is recognized for its rich content of vitamins, minerals, and proteins. Though part of the legume group, alfalfa is also regarded as an herbal plant with a long tradition of medicinal use. Its dried leaves or seeds are commonly used as dietary supplements, while the seeds can also be sprouted to produce nutritious alfalfa sprouts. These sprouts are a good source of vitamin K and provide additional nutrients such as vitamin C, manganese, copper, and folate.
